But this spiralized salad did not start off looking like this.

Celeriac (also known as Celery Root) actually looks like this (below). GASP!

It’s like I pulled a misshaped turnip out of the grown and the sliced off his green mohawk (aka the “celery” stem). Oh poor celery root. I mean celeriac. Not only is it ugly, but it’s name sounds like a disease. But it actuality, this vegetable can help cure disease! How about that for awesomness?!

Let’s discuss!

Fact! Celeriac has a taste that is similar to a blend of celery and parsley. Plus it contains some prettySUPER root vegetable nutrients.

Health benefits of eating Celeriac (celery root):

  • First of all, it’s pretty low in calories and carbs. So it’s a great replacement for those looking to lighten up or “spring clean” their meals. It can be used as a mash, in soup, and of course… SPIRALIZED SALAD! Which is more fun anyway.
  • Second, celeriac contains a good amount of Vitamin K. Which is vital for our bone health! Vitamin Kimproves bone mineralization by promoting bone BOOSTINGfighting activity (all within the bones).
  • Third, it contains some pretty crucial ESSENTIAL minerals that helps boost our immunity and energy. Essential minerals such as phosphorus, iron, calcium, copper, and manganese.
  • And fourth (and the reason I love it), celeriac is said to have calming, antiseptic, and other therapeutic properties. Especially in regards to the digestive system. So those that suffer from digestive disorders, IBS, indigestion, etc. This just might be THE HEALING vegetable you’ll want to ADD to diet ASAP. Ahhh… bliss!

Description

A Vegan and Paleo friendly spiralized salad tossed in a light olive oil mustard dressing. SEE NOTES for options if you don’t have a spiralizer.

Ingredients

Scale

  • 2 large carrots (peeled)
  • 1 medium celery root/celeriac bulb (peeled) – See notes for alternative vegetables
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons olive oil
  • 1 Tablespoon apple cider vinegar (or red wine vinegar)
  • 1 teaspoon honey or agave nectar (maple syrup is fine too. It’s just for a sweetener) – omit for whole 30
  • ½ of a lime (juiced)
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt
  • 3 Tablespoons or more or roasted pumpkin seeds
  • 23 Tablespoons chopped parsley

Instructions

  1. First clean the vegetables. Cut off the tops to both carrot and the celeriac and peel with a peeler.
  2. Place in spiralizer and spiral all the vegetables. If you don’t have a spiralizer, you can just use a grater or julienne cut.
  3. Place noodles in bowl and add in all the ingredients minus the parsley and seeds.
  4. Toss the noodles with the marinade and let it sit in the fridge for 20-30 minutes.
  5. Once it’s marinated in fridge, remove and add the parsley and pumpkin seeds.
  6. Serve immediately or keep in fridge for later.

Notes

Don’t havespiralizer?Simply julienne cut the vegetables.

Don’t have celeriac available? No problem! Try turnips, Jicama, or Daikon radish.

That being said, but you can easily eat this as it. Although, you’re gonna want to go back for seconds or thirds, so you better make that a double celeriac salad. Just sayin….

This salad literally takes 10 minutes to make with no cooking required. YAY! It’s also paleo, whole30 approved, vegan, yada yada yada. ..

But most importantly… it’s FLIPPING GOOD!

FAQs

What is a good substitute for celeriac in salad? ›

If it is being used in a raw salad, you could substitute celery. Obviously the color and texture would be worlds different, but the flavor would be similar. If you are making roasted mixed vegetables, just leave it out. If you are making a kind of stew, perhaps you could add both potato and celery.

What does celeriac taste like? ›

What does celeriac taste like? Celeriac has a mild celery flavor with a refreshing crunch and a little bitterness when raw, and a subtle undertone of sweetness when cooked. If you like radishes and turnips, you will love celeriac raw, and if you enjoy potatoes, you will like the cooked version.

What is the closest vegetable to celeriac? ›

Rutabaga. Rutabaga is the celeriac substitute that most closely resembles the vegetable in appearance. The large bulb of the rutabaga is yellow and similar to the size of a celery root. Although it is identical in looks, the flavor is sweeter and milder than that of celeriac.

What root vegetable is similar to celeriac? ›

I personally enjoy Jicama as a replacement for Celeriac. Jicama has a very similar flavor, but it's less sharp and more dull and earthy. It's less watery than Watercress, which is another good Celeriac substitute.

What is celeriac called in the USA? ›

Is celeriac good for your gut? ›

The fiber found in celeriac benefits gut health, too. The mix of soluble and insoluble fiber it offers treats and prevents both constipation and diarrhea while also helping to avoid the bloating and cramping associated with low fiber intake (a very common problem in the U.S.).

Can you use celery in place of celeriac? ›

Is celeriac the same as rutabaga? ›

Celeriac is one of my favorite roots. It's sweet, savory, and has a slight flavor of celery. Rutabaga is a cross between a potato and a turnip; it has a great texture and a sweet edge that is wonderful roasted.

What is a celeriac substitute for celery? ›

Celery root, a.k.a celeriac, is a root vegetable that tastes just like celery. If you've never had celeriac, it has the same flavor as celery but the texture of a potato. It doesn't sound appealing, but it's actually delicious; its texture makes it perfect for roasting along with other root veggies in place of celery.

Does celery and celeriac taste the same? ›

Though their flavors are similar, celery and celeriac are not interchangeable. Celeriac is much nuttier and earthier than celery stalks. It also has a much lower water content ratio. This gives it a dense, potato-like texture and consistency, making it perfect for purees, mashing, and roasting.
