Happy Saturday!!!

Today is going to feel like Fall! It’s suppose to rain and be cooler than what it has been and there is one thing this kind of weather puts me in the mood for and that is PUMPKIN!!!! Ok, may not completely true, considering it was in the 90’s the past few weeks and I posted pumpkin recipes. I think it’s because all of the cafes are serving pumpkin dishes and seeing that little orange fruit everywhere makes me want to eat it. So instead of sharing a new recipe with you today, I thought I would share with you some of my favorite pumpkin recipes from the past. So let’s get the pumpkin craze started with one of my all time favorite Fall breakfast’s, Pumpkin Pancakes.

These Pancakes are amazing! They are fat, fluffy and so good! They taste like your eating pumpkin pie without the calories!! Try them for breakfast I think you will love them as much as I do!!

This recipe is for my Crunchy Stuffed Pumpkin French Toast. Oh baby this is quick healthy and the cornflakes on top make it all that much better. Forgive the pictures, but believe me it is good.

Pumpkin and Apple Quick Bread – I love the combination of pumpkin and apples together and they both shine through in this bread.


Here is another one of my favorite pumpkin quick breads. This is Pumpkin Bread with Chocolate Chips. Yum! Chocolate and pumpkin, yes please!!

I guess you can tell I like my quick breads. Here is my latest quick bread which is Pumpkin Bread with Cinnamon Chips. This bread is so moist and delicious!!! The pumpkin really shines through!

Now onto muffins! Here is my Pumpkin Pie Muffins. I plan on making these soon! They are so easy to make and oh so good!

These are my Mini Pumpkin Donuts! These are so good and super low in calories! This is a family favorite. Just forgive the pictures, not very pretty. I made these the first couple months blogging.

I was asked last year if I could make a hot pumpkin spice drink, so I created a healthy Pumpkin Mocha Spice Latte. I do not make hot drinks nearly enough. Shame on me!

Here is the readers favorite, my #1 most viewed recipes. The Pumpkin Pie Frappe. One is made with coffee and the other is cream base. You can catch both recipes on this link.
Here is the hot version of the Pumpkin Latte. This is so good! Way better than what you get at a coffee shop! This recipe took me like 4 times to try to re-create, but I did it and shared it with you!

As I said I love pumpkin and apples together and these soft, healthy cookies are perfect. I added in some raisin for some nice chew. A healthy recipe that I need to make again. Maybe this weekend?? Oh this is my Apple Pumpkin Oatmeal Raisin Cookies.

Here is the recipe I made this past week for Pumpkin Chocolate Chip Cookies! So good! They didn’t last very long in my house! My Husband ate them all and he’s not even a pumpkin fan!

Pumpkin Spice Biscotti, this is one of my first biscotti’s I have made and the flavor is pumpkinlicious!!! It goes great with coffee or my hot Pumpkin Spice Latte.

I love this dessert! My Pumpkin Frozen Yogurt! I make this all the time! It’s the perfect healthy combo of frozen yogurt and pumpkin! Yum!! Going to make this tonight for dessert! It’s quick and easy too!! No ice cream maker needed.

Pumpkin Pillows – I haven’t made these in two years. That’s the problem with blogging. You make something once and don’t make it again. These little pillows are made with pizza dough. If you like bread and pumpkin, then you must make these. I remember making these on a rainy Sunday while my Husband watched football.

Ahhh Pumpkin Nut Butter! Dam this stuff is so good and I am for sure making it this weekend! I just eat straight from the jar! I love it!!

Pumpkin Bars – Oh man I forgot about these bars! They are healthy, made with oats and coconut and come in at under 100 calories a bar! Wow!!

Pumpkin Maple Butter – Umm, another recipe on my must make list! This goes great as a side dish with pork, on crackers, on apples, in oatmeal, on yogurt and so much more! Plus you can use it in baking.


Pumpkin Blondies – I love this recipe, but the pictures are not great! I made these the first two months of blogging and my photography was horrible!! But don’t let the photos fool you, these little blondies are amazing and low calorie!
Here is a version one of my versions of a Pumpkin Smoothie – it’s amazing and all healthy, made with banana and pumpkin! Yum!

Oatmeal Pumpkin Breakfast Smoothie – This was a huge hit with Little Jenny! She didn’t even know there was oatmeal in it. She loved it and so do I. Makes for a great breakfast!! I made this a few times last week for breakfast!


Now onto savory! Here is Pumpkin Soup. I got this recipe from the Skinny Bitch Club! So good and so comforting!!

Last and not least how to make the perfect pumpkin seeds and pumpkin puree! I have the step by step directions with photos, so check it out! I love roasted pumpkin and you can make is sweet, spicy or plain! Yum!!!!!

Well those are my personal favorite pumpkin recipes and trust me there will be more! Lots more! I’m on a kick and I can’t stop. My family, well at least Little Jenny and the dogs love PUMPKIN! My dog, Samantha, goes insane over pumpkin and I mean insane. She is a calm dog, doesn’t beg, doesn’t steal but I made the mistake of making pumpkin muffins for the dogs and that’s all I needed to do! Last yearshe stole her first muffins. She ate a whole batch of 12 adult pumpkin muffins! That was the first and last time she has taken food. But now whenever I make anything from cookies to smoothies that contains pumpkin, she is barking and begging for some. She’s a pumpkin fool!!! I guess she kind of takes after her Mom!

I hope you enjoy this weeks round-up! It was fun going back and looking at my old pumpkin recipes. I have more hidden on my recipe page, but I want to re-make them for better photographs.
